recipe: CPress’ favourite vegan salad

CPress have been growing and serving their nutritious repertoire of juices, coffee, snacks and salads across London since 2014 – and we’re excited to have them at Chelsea, Ealing and Shoreditch. In celebration of World Vegan Day on 1st November, we asked CPress to dish up their favourite vegan salad for us.

Ingredients
Quinoa
Rocket
Shredded beetroot
Tumeric humus
Falafel
Cherry tomatoes
Sweet potato
Shelled hemp seeds
Activated walnuts
Coconut bacon
Olive oil and lemon juice

What makes this salad so nutritious…
First off, this salad is packed full of vegan protein sources to keep you feeling full and nourish your body from the inside out – especially if you’ve just finished a sweaty yoga flow!

Quinoa is one of the only forms of vegan protein that is a complete protein, meaning that it contains all 9 essential amino acids necessary to sustain life. We need to get these from our diet because our bodies can’t produce them ourselves.

Peppery rocket not only adds flavour and colour to this bowl but it’s also one of the most nutrient dense salad leaves packed full of those all important vitamins and minerals.

We activate all our nuts and seeds in order to make them more easily digestible and also to remove phytic and oxalic acids which are naturally occurring but have the effect of making the nutrients contained in the nuts less easy to absorb.

Our coconut bacon is unbelievably tasty and adds a real zing of flavour and a satisfying crunch and the turmeric hummus is not only satisfying and super indulgent but turmeric is a great anti-inflammatory and immune boosting.

Build your own salad bowl at triyoga…
Our Build a Bowl concept is unique to triyoga and means that we can offer our customers a greater variety and choice of ingredients. We are especially fond of our breakfast bowls – porridge, coconut yogurt and granola and chia pudding, topped with super foods and fruit. Not forgetting our epic Avocado toast, turmeric hummus and veg toast and our all time fave – almond butter, banana and maple toast.

Cpress’ belief in ‘functional food’
Everything we make and serve at CPress is geared towards F U N C T I O N A L I T Y, our absolute favourite word! For us, functional foods are those which work harder for you so that you don’t have to. So for example, adding sauerkraut to your salad doesn’t just taste good, it also delivers a generous dose of good, probiotic bacteria to your gut which in turn keeps your hormone levels steady, digestion healthy, skin glowing, and so many other things! Elevate your food, choose CPress and discover ultimate health.
