3 small beetroot, peeled
2 cups milk (cow, almond or rice milk)
1/2 cup water
1 tbsp flaxseeds
1 cup loosely packed baby spinach
1/2 banana
5-6 mint leaves
ice (optional)
method
Beetroot can be used raw but if you prefer it cooked you can either boil it in a little water or steam lightly. Add all the ingredients in a high speed blender and blend until smooth. Garnish with mint leaves and have chilled.
