Almost every single organism on our planet is dependant on sun- light. The plants we eat or juice to drink are dependant on these powerful rays for the process of photosynthesis. It is the very process that converts light energy into chemical energy that can later be released to fuel the organisms activities.
The colouration of this planet is a miracle. Without having found an exact explanation about how the colours in individual fruits and vegetables are created, we know that their different shades indicate which phytochemicals for nutritional healing they contain.
Orange plant foods, such as carrots, pumpkin and turmeric are rich in beta- carotene, alpha- carotine and carotenoids that can be converted in the body to Vitamin A, a nutrient integral for vision and immune function. They generally contain high levels of Vitamin C and some also contain omega 3 fatty acids.
Red plant foods, such as tomatoes, beetroots and pomegranate are rich in a carotenoid called lycopene, an anti- oxidant that has been associated with a reduced risk of cancer and might be protective against heart attacks. In addition to Vitamin C, they also contain folate and are a great source of flavonoid to reduce inflammation.
Green plant foods, such as kale, spinach and broccoli are rich in chlorophyll and isothiocyanates, which induce enzymes in the liver that assist the body in removing tissue damaging toxins. They are also an excellent source of Vitamin K, folate, potassium and omega 3 fatty acids.
By eating or drinking plants, we ingest vital substances to activate the Krebs Cycle, a part of our cellular respiration system used by all aerobic organisms to generate energy. By creating energy and nourishing our bodies with powerful anti- oxidants we scavenge free radicals that can enter our bodies in form of toxins.
